July is Sugar Snap Peas

Pleasantly sweet, crisp and tasty.  This summer snack is packed full of nutrients.  What could be better?

Sugar snap peas are not only delicious, but also rich in fiber and teeming with vitamins and minerals.  These crunchy legumes are perfect for a hot summer day!  Pop ‘em like chips!


Snap pea’s high fiber and protein content allows for a slower and more controlled digestion, helping to avoid sharp spikes in blood sugar.  These remarkable antioxidant rich legumes also serve as a great source of vitamin K and C and have anti-inflammatory benefits.  Add a handful of snap peas to your meal or replace your snacks! It’s a perfect way to stay fuller longer and ensure smooth digestion.

Ever heard of Coumestrol?  Well, back in 2009, a study found that this phytonutrient is found largely in legumes including snap peas, and it has some preventive effects against stomach cancer. In addition to the many health benefits snap peas possess, snap peas also are widely available in many grocery stores, are inexpensive and can be stored for many days!


Great for topping a salad or throwing in a stir-fry, sugar snap peas are a refreshing addition to any meal or snack. The peas are just as delicious eaten on their own and very refreshing in the hot weather!  And their pleasant name describes them well: sugary, with a crisp refreshing ‘snap’ when bitten into.  Sugar snap peas are versatile in cooking and are enjoyed by many age groups including children!
