Some people think of sweet potatoes as strictly a holiday ingredient, reserved for grandma’s famous marshmallow and brown sugar preparation, but really, they are an amazing ingredient to use all fall and winter long. Not only are they super healthy (packed with fiber, beta-carotene, and more), they are also incredibly filling and way more versatile than they are given credit for. My favorite way to use sweet potatoes is actually in savory preparations, so step away from the marshmallows and try these great recipes:
Sweet Potato and Forbidden Rice Salad
Did you ever think sweet potatoes could be in an asian inspired dish? Trust me on this one, it works. This is one of my all time favorite recipes and I love to make a big batch to have for lunch all week long. It’s packed with protein, fiber, and antioxidants (plus, it’s vegan and gluten free)!
Sweet Potato Black Bean Burgers
This is not your average veggie burger… it’s way better! The sweet potato mixed with the spicy mexican seasonings makes the perfect sweet-savory combo. Plus, it’s a protein and fiber packed patty.
Sweet Potato-Kale Hash topped with an Egg
This is my go to breakfast, lunch, and dinner in the winter. It works well with sweet potatoes or butternut squash, and the poached or fried egg on top makes the perfect sauce.
Sweet Potato Falafel
Chickpeas don’t always have to be the star ingredient in falafel. Try this easy recipe when you find yourself with a left over baked sweet potato and enjoy them in a pita or over a greek salad.
