Chilled Melon Soup with Mango

Hot summer days can for some ingenuity in the kitchen. Even with air conditioning, you may still not want to turn on the oven or stove and get the kitchen heated up. Or, depending on your area, you may even be under brownout warnings as electricity use peaks on hot muggy days.

If you find yourself looking for a nice cooling, restorative lunch or dinner that is easy on your energy and your kitchen’s then look no further. This refreshing chilled soup requires only the kitchen blender and is very restorative. Sip this from a Champagne glass on your shaded patio for added indulgence!
