Thanksgiving is my favorite holiday. One of the reasons I like it so much is because there are no presents, the main event is the beautiful meal shared with family and friends. In my family we never were formal about saying what we were thankful for, but I would always think of the blessings in my life as I sat down to eat my Thanksgiving meal. Ironically, with my cancer diagnosis, I was never more thankful for my health. My cancer was responding well to the treatment, and I had support of my family and friends, another blessing. I no longer take my health for granted and appreciate all my years as a survivor.
I wish you a Happy Thanksgiving and hope that you enjoy this recipe for gingerbread cake. It contains healthy ginger, cinnamon and cloves and any leftovers can be frozen for later. I wish you many blessings for this Thanksgiving and the years that follow.
